Substitutions · 207 dishes here use it

Out of eggs

The cheapest way to turn a side dish into dinner. Nearly every egg failure is a heat failure — scrambled wants low, fried wants high, and anything custard wants the pan off the burner before you think it does.

Everything below is judged against that job. A swap that covers it is a swap; one that only looks similar is not.

21 of the 207 dishes here that mention eggs list it as optional — 10% of them. In those, the correct substitution is nothing.

What to reach for

Instead · 1

ground flaxseed in water, for binding only

a tablespoon of flax in three of water per egg, rested five minutes

What it gets you
The glue. Meatballs, burgers, a batter that needs to hold together — this does that job honestly.
What it costs you
Lift and richness, both entirely. Nothing about this rises or sets.
Not here
Custards, curds, anything where the egg is supposed to thicken with heat.

Instead · 2

silken tofu, blended smooth

a quarter cup per egg

What it gets you
Body and moisture in a bake, and a scramble that is more convincing than it has any right to be.
What it costs you
Color and any structure that depends on protein setting. Cakes come out denser and damper.

Instead · 3

aquafaba, the liquid from a can of chickpeas

three tablespoons per whole egg, two per white

What it gets you
The one thing nothing else does — it whips. Meringue, mousse, a foam on a drink.
What it costs you
Nothing yolk-shaped. No fat, no emulsifying power, no color.

What none of them do

There is no substitute for an egg in an omelette, a fried egg, or carbonara. In those the egg is the dish and the honest move is to cook something else.

Where you can just leave it out · 21

These dishes list eggs as optional. They were written to work without it, so no ratio is needed and nothing has to be bought.

Where the swap will be tasted · 92

These need it and are short enough that nothing hides: 4 required ingredients or fewer, which makes eggs a quarter of what is in the pan. Make the swap a decision rather than a repair.

Check what else is in the pan

The company eggs keeps in this library, counted off required ingredients. A swap that argues with the top two is the wrong swap, whatever a chart says.
