Method
- Fry the kimchi in sesame oil first until it darkens and loses its raw edge. Three minutes, and it changes the whole pot.
- Include the brine from the jar. That liquid is seasoned, sour and free, and it is most of what makes this taste right.
- Stock in, tofu in gently, and a simmer rather than a boil so the tofu stays whole.
- Crack eggs into the surface at the end if you want them, lid on for two minutes. Scallion raw over the top.
