What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- tofu
- kimchi
- sesame oil
- scallion
- soy sauce
Good if you have them, fine if you do not: rice.
Method
- Crisp the tofu first and take it out. Cooked together, the kimchi's liquid stops the tofu ever browning.
- Fry the kimchi in sesame oil until it darkens and loses its raw edge — three minutes and it changes completely.
- Include the brine from the jar; it is seasoned, sour and free.
- Tofu back in at the end, folded rather than stirred, and scallion raw on top.
An educational plan from a curated corpus. Not a nutrition, allergen, or doneness guarantee.
Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- tofu
- Texture is a decision, not a given.
- kimchi
- Sour, spicy and funky, and older is better for cooking.
- sesame oil
- A seasoning, not a cooking oil.
- scallion
- Two ingredients on one stalk.
- soy sauce
- Salt with a savory backbone, so it seasons and deepens in one move.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
