Method
- A screaming dry pan and a fillet that is genuinely thick. Thin tuna is cooked through before it has a crust.
- Ninety seconds a side and no longer. It should be raw and ruby in the middle — cooked through, tuna is chalk.
- Marinate for ten minutes at most beforehand, or the soy cures the surface and it turns grey.
- Sesame oil and scallion off the heat, and slice it across the grain against the sear.
