Method
- Sashimi-grade tuna and a sharp knife. Cut it into even cubes against the grain — ragged cutting makes it mushy.
- Dress it no more than ten minutes before eating. Soy cures the surface and it goes grey and firm.
- Season the rice while it is warm and let it cool to room temperature before the fish goes on.
- Sesame oil in a small amount, scallion and nori at the end. Cold fish on warm rice, never hot.
