Method
- Freezer beans straight into boiling water for four minutes, no thawing. Longer and they go dull and mealy.
- Season the rice while it is warm — soy and a little sesame. Cold rice absorbs nothing.
- Beans folded in whole rather than mashed, so the bowl has texture.
- Sesame oil and scallion off the heat, nori torn over. Five minutes and it is genuinely good.
