Method
- Steam the fish gently — eight to ten minutes for a fillet — and check early. Overcooked steamed fish falls to shreds.
- Pour off the water that collects under it before anything else. That liquid is bland and it dilutes the sauce.
- Fresh ginger and scallion piled on top after steaming, then hot oil poured over so it sizzles and cooks them for a second.
- That hot oil pour is the technique. Soy around the plate, never over the fish.
