Method
- The sauce and the cutlet are entirely separate cooks and both want your attention at the end.
- Make the curry sauce first and hold it warm — it is better for sitting.
- Pound the pork even, flour, egg, panko, and press the crumbs on firmly.
- Fry at 170C, drain on a rack, slice it, and pour the sauce beside rather than over so the crumb stays crisp.
