Method
- Pickle the onion first — thin slices in vinegar, sugar and salt for twenty minutes. That acid is the whole bowl.
- Crisp the leftover pork in a hot dry pan until the edges go dark and brittle. Reheated gently it is just cold pork, warm.
- Season the rice while it is hot with a little of the pickling liquid.
- Fish sauce, lime and cilantro at the end, all raw. None of the dressing goes near the heat.
