Method

  1. Rinse the rice until the water runs clear, and cook it plain with a good pinch of salt.
  2. Lid on, off the heat, ten minutes' rest before it is touched.
  3. Fork through the lime zest, the juice and a pat of butter while it is still hot.
  4. Cilantro last, off the heat. Zest as well as juice is the difference between this tasting of lime and tasting of sour.
