easyWhy tonight. Frozen corn, cilantro, lime, onion. Feta if you have it. Char the corn if the pan is already hot. Don't boil it.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- corn
- cilantro
- lime
- onion
Good if you have them, fine if you do not: feta.
Method
- Char the corn in a dry hot pan until some kernels are properly black. Boiled corn in a salad tastes of canned corn.
- Let it cool before anything else goes in, or the onion cooks and the cilantro goes limp.
- Onion sliced thin and soaked in the lime juice for a few minutes to take the raw burn off.
- Lime, salt, cilantro and feta last. Corn is sweet and needs more acid and more salt than you would expect.

Sequence, correction, heat and texture, equipment workarounds, scaling, and component reuse are available with this cook sheet.

Why each of these is on the list
What the ingredients are actually doing
- corn
- Sugar that starts turning to starch the moment it is picked, which is why frozen often beats fresh.
- cilantro
- Citrusy and soapy in equal measure depending on who is eating it.
- lime
- Sharper and more floral than lemon, and it fades faster — juice it the same hour you use it.
- onion
- The base under most of this library.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
