Method
- Char the chilies and onion under a hot grill until blackened in patches, then blend. Raw, the sauce tastes grassy and thin.
- Brown the pork hard in batches first and use the same pot.
- Braise low for two hours until the pork gives. There is no fast version of this.
- Cilantro and lime blended in at the very end, off the heat, so the sauce stays green rather than going olive.
