Method
- Blend the tomato, pepper and onion into a paste, then fry that paste hard until it darkens and the oil separates out.
- That frying is the whole dish. Twenty minutes at least, and it should reduce by half and go deep red.
- Rice stirred through the fried base until every grain is coated, then stock, lid on, lowest heat.
- Do not stir it after the lid goes on. The slightly toasted layer on the bottom is wanted, not a mistake.
