Method
- Par-cook the peppers first, cut side down, or they are still crunchy when the filling has dried out.
- Rice half-cooked, not raw and not fully cooked — it finishes inside and absorbs the tomato.

- Fill loosely and put a little liquid in the dish. Cheese only in the last ten minutes.
