Method
- Mix the beef with raw rice, cumin and a lot of salt. The rice goes in uncooked — it swells in the broth and that is what makes the meatball light.
- Roll them small and do not compact them.
- Broth built on onion and tomato, brought to a bare simmer, then the meatballs dropped in and left alone for twenty-five minutes.
- Never boil it. A rolling boil breaks the meatballs apart and clouds the broth, and both are unrecoverable.
