Method
- Brown the beef hard and leave it in big craggy pieces rather than breaking it to gravel.
- Onion in the rendered fat, then cumin bloomed, then tomato cooked right down.
- Beef back in, a splash of water, fifteen minutes at a simmer so it goes from browned to tender.
- It wants something sweet and something sour to be itself: raisins and olives if you have them, otherwise a spoon of honey and a splash of vinegar at the end. Without that contrast it is just browned ground beef.
