Method
- Mix the beef with grated onion, cumin and a lot of salt, and stop mixing as soon as it comes together. Fry a pinch and taste it before you roll the rest.
- Brown the balls quickly in a wide pan and lift them out. They will finish in the sauce.
- Tomato and the remaining onion cooked down hard in that same fat until jammy, then the meatballs back in, half-submerged.
- Crack the eggs into gaps in the sauce, lid on, five minutes until the whites set and the yolks do not. Bread, and nothing else on the table.
