Method
- Tear the tortillas and crisp them in a little oil until they are genuinely hard. Stale is better than fresh.
- Tomato, onion and cumin cooked into a sauce and seasoned much harder than seems reasonable — it is carrying everything.
- Fold the crisped tortillas through the hot sauce off the heat and serve within a minute. Longer and you have made a casserole.
- Eggs on top, something cold and sharp beside them. Cream, crumbled cheese and raw onion all do the same job here, which is stopping the sauce from being the only thing in your mouth.
