Method
- Tear the tortillas and crisp them in a dry or barely oiled pan. Stale ones are better than fresh.
- Cook the tomato and onion down into a sauce and season it harder than you think — it has to carry the whole dish.
- Fold the crisped tortillas through the hot sauce and stop. Thirty seconds too long and it is a casserole.
- Eggs on top, feta and cilantro, and it goes to the table immediately. Chilaquiles do not wait for anybody.
