Method
- Cut the tortillas into strips and fry them in a little oil until they are properly hard. Soft strips turn to paste the moment egg touches them.
- Onion in with them at the end, then the beaten egg over the top.
- Stir slowly and pull the pan off the heat while it still looks underdone. Cheese in the last ten seconds.
- The texture is the point: some strips crisp, some softened by egg. Cooked to uniformity it is just scrambled eggs with sadness in them.
