easyWhy tonight. Crush the beans into the onion so they stay put when it is cut. Cheese against both faces — melted cheese is the glue.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- pinto beans
- tortillas
- cheddar
- onion
Good if you have them, fine if you do not: jalapeno.
Method
- Cook the onion soft first and crush the beans into it with a fork. Whole beans roll out of a quesadilla the moment it is cut.
- Season the bean mash properly. Unseasoned beans under cheese is the most common way this goes wrong.
- Cheese against both tortilla faces with the beans in the middle. Melted cheese is the glue and it has to touch the bread.
- Dry pan, medium heat, pressed with a spatula. Butter or oil in the pan makes it greasy rather than crisp.

Why each of these is on the list
What the ingredients are actually doing
- pinto beans
- Softer and earthier than black beans, and they break down willingly, which makes them the right bean when you want the pot to thicken itself.
- tortillas
- They want direct heat before they go anywhere near a plate.
- cheddar
- Sharpness plus melt. Aged cheddar tastes like more and melts like less, so a dish that wants both usually wants a mix — grate it, do not slice it, and take the pan off the heat before it goes in.
- onion
- The base under most of this library.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
