Method
- Braise the beef whole and low until it falls apart — two hours at least. Then shred it, never before.
- Peppers and onion cooked long and soft in the meat fat, fifteen minutes.
- Cumin bloomed in that fat, then tomato reduced hard.
- Shredded beef returned to the sauce and simmered another twenty minutes so it takes it on. Olives if you have them.
