Method
- Slice the beef thin across the grain and dry it. Wet beef in a hot pan boils and goes grey.
- Sear it hard in batches, take it out, and leave the fat.
- Peppers and onion into that fat, cooked until they slump and char at the edges — ten minutes, not three.
- Cumin bloomed at the end, soy down the side of the pan, beef back in for thirty seconds only.
