Method
- Slice the beef as thin as you can manage — freeze it twenty minutes first and it slices much thinner.
- Simmer the onion in the soy, sugar and ginger until soft before the beef goes near it.
- Beef in for ninety seconds only, in the simmering liquid rather than seared. This is a poach, not a fry.
- Spoon it over hot rice with plenty of the liquid, and a soft egg on top if you have one.
