What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- bell pepper
- rice
- tomato
- onion
- oregano
Good if you have them, fine if you do not: olive oil.
Method
- Scoop the tomato flesh out and use it in the filling rather than discarding it. That is the seasoning.
- Rice half-cooked only. Raw rice will not soften inside; fully cooked rice goes to mush.
- Fill loosely, sit them in a dish with a little water and a great deal of olive oil.
- A long moderate bake, an hour or more, until the tops are browned and collapsing. It is better warm than hot.

Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- bell pepper
- Sweetness and water. Raw it is crunch, blistered under a broiler it goes silky and smoky and stops tasting like a salad bar — that char is most of the reason to buy them.
- rice
- Starch that either steams or fries, and the two want opposite things.
- tomato
- Sweet, sour and savory at once, which is why it holds up so many dishes with no meat in them.
- onion
- The base under most of this library.
- oregano
- One of the few herbs that is stronger dried than fresh, and the dried version is what most of these dishes want.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
