Method
- Brown the chicken skin-side down and do not move it. That skin is where the whole dish gets its color and fat.
- Take it out, peppers and onion into the fat until they slump — fifteen minutes, not five.
- Tomato cooked down hard, then chicken back in skin above the liquid so it stays crisp.
- Oregano is a dried herb and goes in early. Fresh herbs go on at the end; that rule holds everywhere.
