easyWhy tonight. Wash the leeks after slicing, never before — grit lives between the layers. Melt them slowly, because browned leek turns bitter.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- eggs
- leek
- butter
Good if you have them, fine if you do not: goat cheese.
Method
- Slice the leeks and wash them in a bowl of water after slicing, not before. Grit hides between the layers and only rinses out once they are open.
- Butter, low heat, lid on for five minutes. Leeks want to melt, not color, and browned leek tastes bitter.
- Eggs in on the same low heat, stirred, pulled early.
- Goat cheese in off the heat in lumps. It softens into pockets and its acidity is exactly what sweet leek needs.

Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- eggs
- The cheapest way to turn a side dish into dinner.
- leek
- The gentlest allium — sweet and silky when cooked slowly in fat.
- butter
- Flavor and body in the same spoonful.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Shares eggs, butter
French omelette
Two-ingredient truth. Skill is the only hard part. Stop stirring when curds form, roll, slide. Cheese in the last ten seconds.
Shares eggs, butter
Hot sauce eggs
Spicy breakfast. Eggs in butter, hot sauce at the table, bread if you have it. Don't cook the sauce into the eggs until it is brown.

Basil mozzarella scramble
Drain the mozzarella on a towel first. In off the heat so it softens into strands, and the basil goes on at the table, never in the pan.

Cottage cheese scramble
Cottage cheese into the raw eggs looks wrong and cooks into the softest scramble you will make without cream.
Next
Cook it, then tell the shelf what you used.
The ranking is only as honest as the shelf behind it. Empty the cream, and everything that leaned on cream should stop being offered.
