Method
- Butter, low heat, eggs stirred continuously. Low and slow gives small curds and a custard texture; high heat gives rubber.
- Pull them off while they still look a touch too loose. Carryover heat finishes them on the plate every time.
- Hot sauce after plating, never in the pan. Vinegar in the pan makes the eggs weep water.
