Method
- Tomatoes cooked down in olive oil until they collapse and the pan smells sweet rather than sharp. Ten minutes at least.
- Feta pushed down into the sauce in big pieces, not crumbled. You want molten pockets, not a uniform pink sauce.
- Wells made with a spoon, eggs cracked into them, lid on, low heat.
- Pull it when the whites are just set and the yolks still move. They keep cooking in the hot pan for another minute after the heat is off.
