Method
- Feta will not sear like halloumi, so do not try. Bake it instead — a block in oil with tomatoes at 200C until it slumps and browns at the edges.
- Tomatoes burst and make the sauce; the feta goes soft and salty rather than melting away.
- Oregano in with the oil at the start, since dried herbs want time and heat.
- Bread to push through it, and no extra salt anywhere.
