Method
- No lettuce. A horiatiki is tomato, cucumber, onion, olives and feta, and lettuce is what turns it into a different, worse salad.
- Cut everything in large pieces — this is eaten with a fork and bread, not speared with a toothpick.
- Salt the tomatoes first and let them sit a few minutes to bring out their liquid, which becomes half the dressing.
- The feta goes on in one slab, not crumbled, with oregano and olive oil over it. Room temperature, never cold.
