What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- bread
- feta
- tomato
- olive oil
Good if you have them, fine if you do not: oregano.
Method
- Salt the tomato slices on the board first and leave them while the bread toasts. They season and they weep.
- Rub the hot toast with a cut garlic clove if you have one, then oil it.
- Feta crumbled on before the tomato, so the cheese takes the moisture rather than the bread.
- Oregano and more oil at the end. Skip extra salt — between the feta and the salted tomato you are there.

Why each of these is on the list
What the ingredients are actually doing
- bread
- Structure, thickener, and the reason a lot of these dishes stretch.
- feta
- Salt and tang in crumbles, so it seasons while it garnishes.
- tomato
- Sweet, sour and savory at once, which is why it holds up so many dishes with no meat in them.
- olive oil
- Two ingredients sharing a name.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
