easyWhy tonight. Anchovy melts if the toast is hot.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- bread
- anchovies
- tomato
- olive oil
Good if you have them, fine if you do not: lemon.
Method
- Salt the tomato and let it sit on the board while the bread toasts, so it seasons and loses some water.
- Rub the hot toast with garlic, then oil it generously. This is an oil-forward plate and being shy ruins it.
- Anchovies laid on whole, not mashed. This one is meant to taste of them.
- Lemon over at the end and no extra salt. Anchovy plus salted tomato is already at the line.

Why each of these is on the list
What the ingredients are actually doing
- bread
- Structure, thickener, and the reason a lot of these dishes stretch.
- anchovies
- They dissolve. Melted into hot oil at the start nothing tastes of fish — it tastes of depth, and the people who say they hate anchovies have almost always only met them whole on a pizza.
- tomato
- Sweet, sour and savory at once, which is why it holds up so many dishes with no meat in them.
- olive oil
- Two ingredients sharing a name.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
