Method
- Potato boiled, drained and steamed dry, then mashed with a great deal of very brown onion cooked slowly in oil. The onion is the whole flavor and it wants twenty-five minutes.
- Season it harder than seems reasonable — it is a large amount of potato inside a large amount of dough.
- Roll the dough thin, lay the filling in a log, roll and pinch, then cut and seal each end.
- Egg wash and a hot oven until deep gold. Mustard at the table, and nothing else.
