Method
- Potato and onion cooked gently in a lot of olive oil until soft. This is poaching, not frying — no color.
- Drain them, and keep the oil. Fold the hot potato into the beaten eggs and let it sit ten minutes so the egg soaks in.
- Back into a modest pan on medium-low. Loosen the edges as it sets.
- Flip it onto a plate and slide it back. The middle should stay slightly loose — a dry tortilla is a frittata that lost its nerve.
