Method
- Beat the eggs with the cheese and a great deal of black pepper before the pasta is drained.
- Off the heat entirely. The pasta's own warmth cooks the egg into a sauce and a hot pan scrambles it.
- A splash of pasta water in the egg mixture first, to temper it and loosen it.
- Toss fast and keep tossing. If it tightens, more pasta water; if it scrambles, start again.
