Method
- Toast a heavy spoonful of coarsely cracked black pepper in a dry pan until you can smell it across the room. That is the whole seasoning, so it has to be woken up.
- Cook the pasta in the least water that will cover it. Less water, more starch, and starch is the only emulsifier in this dish.
- Off the heat, in a warm pan and not a hot one, work finely grated pecorino or parmesan into a splash of that water until it is a smooth paste, then add the pasta.
- Toss hard. If the cheese seizes into strings the pan was too hot — a spoonful of cool water and more tossing usually brings it back.
