Method
- Grate the potato and onion together. The onion is not only flavor — it keeps the potato from going pink while you work.
- Wring the whole lot out in a towel, then let the liquid settle and pour it off, keeping the pale starch in the bottom of the bowl. That starch goes back in.
- Beat in the eggs and a great deal of salt. It should look wetter than seems right.
- Heat the fat in the dish first, in the oven, until it shimmers, then pour the mixture into hot fat. That is the difference between a kugel with an edge and a tray of steamed potato.
- Hot oven, an hour, uncovered. Cut it after ten minutes' rest.
