Method
- Cube the potato small and even. Parboil for five minutes if you want the inside soft; skip it if you want it chewy.
- Hot pan, butter, one layer, and then leave it alone. Every time you stir a hash you are trading crust for steam.
- Onion in halfway. Once there is a real crust, make wells and crack the eggs in.
- Lid on for a minute to set the whites. Something sharp at the end — hot sauce, vinegar, pickled onion — or it is just starch.
