easyWhy tonight. Crack a pod in the shaker, gin, lemon, sugar, soda. Egg white if you want foam — never assumed. Don't make chai and add gin.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- gin
- cardamom
- lemon
- soda
- sugar
Good if you have them, fine if you do not: eggs.
Method
- Crush the cardamom pods and steep the seeds in warm syrup for ten minutes, then strain. Longer and it goes soapy.
- Gin, lemon and the syrup shaken hard — before the soda, always.
- Strain into a chilled glass and add the soda last, poured down the side.
- Cardamom and juniper are both aromatic and resinous, and they read as one flavor rather than two.
An educational pour, not a reprint of a licensed spec. No allergen or alcohol-safety claim.
Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- gin
- Botanicals over a neutral base, and every bottle draws its own map — juniper-forward gin makes a bracing drink, a softer modern one makes a floral one.
- cardamom
- Floral, resinous and expensive, so it is easy to overdo.
- lemon
- Acid you add at the end, not the start.
- soda
- Carbonation is a texture and it is the first thing you lose.
- sugar
- Not just sweetness — it balances acid and bitterness, which is why a sour drink and a tomato sauce both want a little.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Kefir cardamom fizz
Kefir, a cracked pod, honey, lemon, soda. Alive and tart. Mint if you have it. Don't shake the soda. It should taste like a lassi that went to a bar.

Garden cup
Pimm's-adjacent without the bottle: gin, lemon, cucumber, mint, soda or ginger ale. Fruit as garnish, not a salad. A garden highball, not punch.
