easyWhy tonight. Kefir, a cracked pod, honey, lemon, soda. Alive and tart. Mint if you have it. Don't shake the soda. It should taste like a lassi that went to a bar.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- kefir
- cardamom
- honey
- lemon
- soda
Good if you have them, fine if you do not: mint.
Method
- Crush the cardamom and steep it in warm honey syrup for ten minutes, then strain and cool it completely.
- Whisk that syrup into the kefir before any lemon goes in, or the acid thickens it and the honey never disperses.
- Lemon slowly, then soda over ice.
- Tart dairy, warm spice and bubbles is an unusual three and one of the better zero-proof drinks on this list.

What the method is trying to make happen
Sequence, correction, heat and texture, equipment workarounds, scaling, and component reuse are available with this cook sheet.
An educational pour, not a reprint of a licensed spec. No allergen or alcohol-safety claim.
Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.

Why each of these is on the list
What the ingredients are actually doing
- kefir
- Thinner and more sour than yogurt, with a slight effervescence.
- cardamom
- Floral, resinous and expensive, so it is easy to overdo.
- honey
- Sweetness with a floral edge and enough body to change the texture of what it is in.
- lemon
- Acid you add at the end, not the start.
- soda
- Carbonation is a texture and it is the first thing you lose.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
