Method
- Precooked cornmeal, not polenta or regular cornmeal — the dough will not form otherwise and that is the usual failure.
- Mix with warm salted water and let it rest five minutes so the meal hydrates and stops cracking.
- Shape thick, about three quarters of an inch. Thin arepas dry out and have nowhere for the filling to go.
- Griddle dry over medium heat until a crust forms, then split and fill while hot.
