easyWhy tonight. Crumble leftover cornbread into a sausage-egg pan. The sweet crumb is the point.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- cornmeal
- eggs
- sausage
- cheddar
Good if you have them, fine if you do not: hot sauce.
Method
- Crumble the cornbread and toast it in the sausage fat until the edges catch. Warmed gently it is just dry cornbread.
- Sausage browned first and taken out, so nothing steams.
- Eggs in last, on lower heat, and pulled while still soft.
- Cheddar off the heat and hot sauce at the table. It is a use for the end of a pan of cornbread and better than the first day.

Why each of these is on the list
What the ingredients are actually doing
- cornmeal
- Grit and sweetness. As a coating it fries crisper than flour; as a porridge it needs far more liquid and far more time than the package claims, and stirring is not optional.
- eggs
- The cheapest way to turn a side dish into dinner.
- sausage
- Seasoned fat and meat that arrives pre-flavored, so it does double duty as protein and as the base a dish is built on.
- cheddar
- Sharpness plus melt. Aged cheddar tastes like more and melts like less, so a dish that wants both usually wants a mix — grate it, do not slice it, and take the pan off the heat before it goes in.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Arepa skillet
Cornmeal cakes, cheese in the middle. Eggs on top. Not a pancake, not a tortilla.

Leftover grits cakes
Cold grits set like polenta. Slice, fry, cheese. Breakfast from last night's pot.

Sopa paraguaya
Not a soup: a dense corn-cheese cake. A lot of onion, a lot of cheese. It should slice, not spoon. Don't make cornbread and skip the onion.

Ham cheddar omelette
Fry the ham first so the middle does not go wet. Fill after the curds set, then roll it out of the pan while it is still pale.
