Method
- Bacon into a cold pan, brought up slowly. Cold start renders the fat out; hot start burns the outside around a raw middle.
- Bacon out onto paper, and leave the fat in the pan. That fat is the point of cooking them together.
- Eggs into the bacon fat, heat down, and spooned rather than flipped if you want the yolk soft.
- Salt the whites only. Salt on the yolk pits the surface and speckles it grey.
