What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- eggs
- scallion
- butter
Good if you have them, fine if you do not: soy sauce.
Method
- Whites and greens of the scallion separated. Whites into foaming butter first for a minute.
- Eggs beaten only until the whites disappear, salted now, and into the pan on low.
- Stir slowly and constantly, pulling the pan off the heat every few seconds. Curds should be small and the whole thing should stay glossy.
- Greens in at the very end, off the heat. Three ingredients, four minutes, and it lives or dies on the heat being lower than you want it to be.

Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- eggs
- The cheapest way to turn a side dish into dinner.
- scallion
- Two ingredients on one stalk.
- butter
- Flavor and body in the same spoonful.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

If you bought for this, you can already make these
Shares eggs, scallion, butter
Cottage cheese scramble
Cottage cheese into the raw eggs looks wrong and cooks into the softest scramble you will make without cream.
Shares eggs, butter, scallion
Miso butter eggs
Miso off the heat so it stays round.

French omelette
Two-ingredient truth. Skill is the only hard part. Stop stirring when curds form, roll, slide. Cheese in the last ten seconds.

Hot sauce eggs
Spicy breakfast. Eggs in butter, hot sauce at the table, bread if you have it. Don't cook the sauce into the eggs until it is brown.
Next
Cook it, then tell the shelf what you used.
The ranking is only as honest as the shelf behind it. Empty the cream, and everything that leaned on cream should stop being offered.
