Method
- An enormous amount of onion, sliced thin, cooked in a dry pan with no fat until it collapses and dries out. Thirty minutes and no shortcut.
- Only then the butter, ginger and spice, cooked until the whole mass darkens into a paste.
- Chicken in, coated, and simmered with very little liquid until it falls apart.
- Hard-boiled eggs scored and slipped in for the last ten minutes. It should be thick enough to eat with bread rather than a spoon.
