Method
- Silken tofu, cut in the package and slid in whole. Firm tofu is the wrong texture and cubes break the dish.
- Fry the gochujang and garlic in oil first until the fat turns red, which is the base and takes a minute.
- Stock in and brought to a hard boil — this is one stew that wants to arrive at the table still bubbling.
- Egg cracked in at the last second and left to poach in the residual heat.
