easyWhy tonight. Crisp the tofu, then a shallow soy broth. Don't soak it into mush.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- tofu
- stock
- soy sauce
- scallion
Good if you have them, fine if you do not: panko, ginger.
Method
- Press the tofu properly first. Wet tofu will not take a coating and will spit violently in oil.
- Coat lightly in starch or fine crumb, and fry until pale gold rather than dark.
- The broth is served warm and poured around the tofu at the table, never over it in the kitchen.
- Poured over in advance, the coating goes soft in a minute and the whole point is lost.

What the method is trying to make happen
Sequence, correction, heat and texture, equipment workarounds, scaling, and component reuse are available with this cook sheet.
An educational plan from a curated corpus. Not a nutrition, allergen, or doneness guarantee.
Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
The technique underneath this
- StockPulling gelatin and flavor out of bones and aromatics without pulling out the things that make it cloudy and bitter.thin and watery · cloudy · bitter · greasy
- FryingHolding oil in a narrow temperature band so water leaves the food faster than oil enters it.greasy · pale · burnt outside and raw inside · coating fell off
Going wrong while you cook it? Say what it is doing and the triage will tell you what is happening, the smallest move, and the instinct to resist.

Why each of these is on the list
What the ingredients are actually doing
- tofu
- Texture is a decision, not a given.
- stock
- Body, not flavor — that is the part people get backwards.
- soy sauce
- Salt with a savory backbone, so it seasons and deepens in one move.
- scallion
- Two ingredients on one stalk.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
