Method
- Silken or soft tofu, cut in the package and slid in gently. Firm tofu is the wrong texture for this entirely.
- Brown the pork hard first until there are genuinely crisp bits, which is where the dish gets its depth.
- Gochujang fried in the fat for thirty seconds before any liquid — it burns in a dry pan and it must not.
- Fold the tofu in rather than stirring, two or three passes only, or it breaks up into the sauce.
