Method
- Everything cut and within reach before the pan is hot. A stir-fry is four minutes of cooking and twenty of preparation.
- Pork sliced thin across the grain, dried, and seared in a screaming pan in one layer without moving it.
- Grated ginger and garlic for thirty seconds only, at the end. Any earlier and they burn black.
- Soy down the hot side of the pan so it sizzles and reduces onto the meat rather than pooling under it.
